The Fairmont Norfolk is a historic hotel in Nairobi, Kenya and is owned by the luxury hotel chain, Fairmont Hotels and Resorts. The hotel has 170 rooms, 4 restaurants, and consists of 5 main blocks, each ranging from 1 to 2 stories high. The hotel has a signature Tudor style of architecture that has been maintained since its original construction.

Kitchen Steward

What you will be doing:

  • Responsible for the cleanliness and sanitizing of all surfaces
  • Keeping floors and work areas clear of hazards and obstruction
  • Responsible of the operation of kitchen cleaning equipment
  • Operation of dish machines for washing all hotel dishes include chinaware, glassware and flatware
  • Maintain a hygienic working environment in accordance with Health Department regulations, Brand and Departmental Standards.

Assistant Food & Beverage Outlet Manager

What you will be doing:

Reporting to the Outlets Manager, responsibilities and essential job functions include but are not limited to the following:

  • Consistently offer professional, friendly and engaging service
  • Follow departmental policies, procedures and service standards
  • Recruit, train, manage, mentor, lead and develop your supervisors and colleagues
  • Effective performance management through focus on colleague development training, problem resolution, maintain up-to-date records on performance and audits, attendance, grooming, service deficiencies, schedules, labour costs/payroll, and late/absenteeism
  • Working closely with Food and Beverage Trainer/Recruiter to ensure all Standards manuals are present and up-to-date, job task checklist are completed, and all the Standard Operating procedures are taught and followed
  • Supervise and support employees while ensuring service standards are maintained
  • Maintain a first class and positive visual impact including; ambiance, cleanliness, orderliness, décor and service flows
  • Exhibits an entrepreneurial attitude towards the restaurant’s operation
  • Constantly seek out creative ways to improve departmental profit by increased capture of covers, average check growth through up selling, and performance management and being able to take risks
  • Responsible for scheduling and daily payroll reporting
  • Ensure constant focus on the venue's goal
  • Assist to ensure the venue is managing within set budget guidelines
  • Ensure cleanliness and safety of the venue
  • Act as a liaison between venue staff and other departments

Your experience and skills include:

  • Minimum 3 years’ experience as a Leader in a fast paced high end restaurant required
  • Excellent beverage and wine knowledge is required
  • Previous point of sale system experience required
  • Experience with Unionized environment an asset
  • Computer literate in Microsoft Window applications required
  • University/College degree in a related discipline preferred
  • Excellent communication and organizational skills
  • Strong interpersonal and problem solving abilities

Bartender-Cin Cin

The Bartender ensures that the bar attached to him/her is clean and tidily arranged and beverage cost is low.  She/ He reports directly to the Outlet Manager and to undertake full responsibility of bar stock and service as requested by the Supervisors.  Thorough knowledge of the products of the certain bar and specialties and service required.  She/ He is aware of the beverage incentive of the outlet inclusive of the drive to achieve absolute beverage excellent as required.

What you will be doing:

Reporting to the Outlets Manager, responsibilities and essential job functions include but are not limited to the following: 

  • Good knowledge of the drink prices, bottle prices and all beverage policies. 
  • Able to mix all the international cocktails as well as the cocktails in the hotel.
  • Maintain the highest standard of drink preparation and ensure that every aspect of a drink is carefully looked after.
  • Able to handle complaints efficiently and report all complaints to his Supervisors. 
  • Able to recommend and push for beverage sales.
  • Check that all hard liquors are kept and locked.
  • Always comply with the Hotel’s policy and standard of service.
  • Always utilise the standard jigger when pouring liquor.
  • Attend daily roll calls.
  • Attend all meetings concerning certain outlet’s as instructed by the Supervisors.
  • Clean the bar outlet on a daily basis for an excellent working condition using the inspection checklist.
  • Conduct herself/himself in a manner expected of a bartender and member of the F&B, gaining the respect of his fellow workers.
  • Do cashiering whenever required.
  • Take food order and serve food in any outlet that you are attached.
  • Able to use the computer for requisition of beverage stocks.
  • Comply with hotel and department policies and procedures at all times.
  • Carry out any other duties as and when assigned by the Management of the Hotel and department.

Your experience and skills include:

  • skilled in Bar service and supervision with the ability to work in a multicultural and diverse environment
  • penchant for customer service and effectively manage guest complaints
  • ability to train and manage a dynamic team
  • excellent English communication skills; both verbal and written
  • minimum 2 years supervisory or team leader experience in a hotel environment is essential

Demi Chef de Partie

We are looking for a dynamic, forward-thinking and proactive Demi Chef De Partie  responsible for assisting the Executive Sous Chef and Sous Chef in managing the culinary operation and ensuring that all culinary and stewarding activities are completely aligned with the local and international safety and HACCP regulations as well as values and strategy of the Hotel.
